It’s unofficially matzah season, folks: The unleavened bread plays a primary role in Passover, a major Jewish holiday that lasts for eight days in early spring. IMHO, that is definitely not enough time to enjoy all the delicious matzah recipes you can make at home right now. And it truth, many people create dishes with matzah (aka matzo or matza) year-round.

Looking beyond the ultimate comfort food classic, matzah ball soup, there are sandwiches, pizzas, brittles, and bakes that all use matzah as a main ingredient. Scroll down for five different matzah recipes that’ll make for the perfect lunch, dinner, snack, or fun, Passover-friendly dessert.

1. Salted Toffee Matzah

This treat is so simple to make from scratch, and it’s just as great as a dessert as it is for a quick snack to grab on the go. It’s the perfect mix of sweet and savory—thanks to the combo of melted chocolate, toffee, and flaked sea salt. We love that you can customize it to your heart’s content: Try adding toasted almonds, coconut flakes, or dried goji berries for an extra serving of heart-healthy fiber and antioxidants.

2. Matzah Nachos

These machos (aka matzah nachos) are described as “the perfect cure for Manischewitz wine hangovers” by the recipe developer, and we’re here for it. For it, matazh is broken up into “chips” and baked before being covered in melted cheese. They’re easy to make in about 15 minutes, and you can top them with pico de gallo, guacamole, roasted veggies, and sour cream—really whatever you’ve got in the fridge.

3. Matzah Lasagna

Calling all cheese-lovers. This matzah lasagna is gooey and cheesy while still maintaining that classic matzah crispiness to it. It’s packed with flavor thanks to basil, garlic, bell peppers and plenty of Parmesan. This one is bound to please even the pickiest eaters at your Passover dinner.

4. Matzo-rella Sticks

What’s not to love about fried (unleavened) bread that’s filled with cheese? These are a great snack to have alone, paired with the classic marinara, or with any sauce or topping you have on hand. Cooking them in the air fryer is the ultimate power move.

5. Matzah Brei Mac ‘n Cheese

This iteration of the classic Passover-friendly comfort food dish combines scrambled eggs with matzah, vegan cream cheese, and cheddar. But it tastes every bit as good as traditional matzah brei only with an uber creamy texture. Best part? It only requires five ingredients to whip up.
